Carbone New York is the original, cult-favourite Italian-American dining room in Greenwich Village, glowing behind its neon sign on Thompson Street. Opened in 2013, it was conceived as a love letter to the great mid-century “red sauce” restaurants of New York – the sort of place where the lighting is low, the portions are generous and dinner always feels like an occasion.
Inside, expect tiled floors, wood panelling, white tablecloths and artwork everywhere, with captains weaving through the room in signature tuxedo jackets. The vibe is glamorous but not stiff: it’s designed to feel like a slightly heightened version of old New York, with a soundtrack to match and a room that gets steadily louder as the evening goes on.
What to expect
On the plate, Carbone is all about elevated classics. Think tableside Caesar, spicy rigatoni vodka, lobster fra diavolo, veal Parmesan and huge, shareable mains, all made with top-tier ingredients and very polished technique. Desserts are old-school and indulgent, and there’s a deep wine list alongside strong, classic cocktails.
Service is theatrical and highly choreographed – big trays, tableside flourishes, and a general sense of “abbondanza”. It’s not a quiet, tucked-away restaurant; it’s a high-energy room built for celebrations, late dinners with friends, and the occasional “this is our big night in New York” experience.
